Nekbat

Kuih nekbat is a type of traditional dessert made from rice flour and eggs, popular in Malaysia, particularly in the East Coast states of Kelantan and Terengganu. Kuih nekbat is typically prepared in two phases. In the first phase, the flour mixture is baked and cooked until it becomes fluffy like sponge cake but bland and firmer. Once cooked, the nekbat is stored dry or sold to customers who will prepare it before serving. These dry nekbat can last longer and can be stored in the refrigerator.
